Cardoon
The cardoon (Cynara cardunculus) is a perennial plant from the Asteraceae family, grown for its fleshy stems and edible leaves. The cardoon resembles the artichoke, but is generally larger with broader and spikier leaves. The stems are bleached to reduce their bitterness before being consumed, and have a mild, slightly sweet taste.
