Beet
The red beet (Beta vulgaris) belongs to the Chenopodiaceae family and is primarily grown for its thick roots, although the leaves of some varieties are also edible. Originally from the Mediterranean region, beets are now cultivated worldwide. They are biennial plants, but in modern agriculture, beets are typically harvested before they bloom, after a few months of growth. Growing beets is relatively easy, and they provide an excellent source of nutrients. They come in a variety of colors, shapes, and flavors, which can be enjoyed both raw and cooked.
