Chinese cabbage
Originally from China, Chinese cabbage is mentioned in texts dating back to the 5th century and is believed to have been introduced to Europe in the 18th century, where it has been cultivated ever since. There are two main types of Chinese cabbage: "Pé Tsaï" (Brassica campestris var. pekensis), with light green leaves and a vertical growth pattern, which is more or less compact depending on the variety, such as Granaat and Astuko; and "Pak Choï" (Brassica campestris var. chinensis), with glossy dark green leaves resembling small Swiss chard, and a white, fleshy leaf stem that varies in development, with examples such as Tatsaï and Tatsoï.
