Cayenne Pepper – Very Hot Red Chili

The Cayenne pepper is a spicy variety (8/10 on the Scoville scale) with slender fruits measuring 15 to 20 cm long that turn red when ripe. The plant can grow up to 1 meter high and produces numerous peppers that dry very well.

Growing Advice for Cayenne Peppers

Sowing

Sow indoors in February-March at a constant temperature of at least 23-24°C. Keep the environment warm and humid with sufficient light and regular watering. Some pepper varieties require more heat to germinate (above 25°C). Increase the temperature if seeds do not sprout.

Transplant seedlings into pots once they have 3-4 true leaves. After the last frost, they can be planted in open ground, preferably in a sheltered location. Like tomatoes, the stem can be buried up to the first leaf to encourage additional root formation.

In cooler regions (north of the Loire), Cayenne peppers grow best in a greenhouse. However, they can also thrive outdoors in a sunny, well-ventilated spot, such as along a wall.

Care

Ensure well-drained, nutrient-rich soil by adding compost or well-rotted manure. Water regularly to keep the soil moist and avoid prolonged droughts, which can affect fruit quality.

In northern regions, prune the main stem (above the last fruit) when the plant has around ten fruits to focus its energy on existing ones. Pinch back side branches with fruit to two leaves after the last fruit. Provide support if needed, especially for taller varieties.

Feed the plants during the growing season with organic fertilizers or foliar sprays such as diluted nettle manure (e.g., PurMel 3).

Diseases and Prevention

Powdery mildew is a major threat. Prevent it by:

  • Practicing good crop rotation;

  • Watering carefully to avoid wetting leaves;

  • Keeping sufficient space between plants for good air circulation;

  • Strengthening plants with nettle manure or horsetail decoction;

  • Using seaweed powder for protection.

Harvesting

Harvest runs from July to October, around 5-6 months after sowing. Green peppers can be picked while growing, but for maximum flavor and spiciness, allow them to fully ripen to red. These Cayenne peppers are perfect for fresh use or drying for long-term storage.
