Caraway Seeds

Caraway (Carum carvi), also known as "wild cumin" or "anise of the Vosges," is a biennial plant from the Apiaceae family, native to Europe and Asia. Caraway has been valued since ancient times for its aromatic seeds and medicinal properties. With its fine, feathery leaves and white umbrella-shaped flowers, caraway is also an ornamental addition to the garden. The seeds are beloved in the kitchen for their warm, mildly aniseed flavor.

Growing Tips
Sowing:

  • Sowing time: Sow caraway directly in the ground from March to June or in September for a harvest the following year. In northern areas, it's recommended to sow in the spring to enhance winter hardiness.
  • Sowing depth: Sow seeds at a depth of about 1 cm. Thin out plants to 20 cm apart to promote healthy growth.

Growing conditions:

  • Light: Caraway prefers full sun.
  • Soil: The plant thrives in a light, well-drained, and fertile soil. Avoid overly wet soil, as it can hinder growth.
  • Watering: Water moderately, as caraway is relatively drought-tolerant once established.

Maintenance:

  • Pruning: Remove wilted flowers to encourage seed production.

Harvest

  • Seeds: Caraway blooms in the second year with white flower umbels. Harvest the seeds when the flower heads turn brown and begin to dry. Cut off the flower umbels and let them dry in a dry, ventilated space before extracting the seeds.
  • Leaves and roots: The young leaves can be harvested in the first year for fresh use in cooking. The roots, which resemble small parsnips, can be harvested in the fall of the first year and cooked.

Uses
Culinary:
Caraway seeds are often used in traditional dishes such as seasoning bread, cheese, cabbage, and meat dishes. Freshly picked young leaves can be added to salads and soups for their mild aniseed flavor. The roots taste somewhat like parsnips and can be cooked and eaten.

Medicinal:
Caraway is known for its digestive properties. It is often used in teas to relieve digestive problems, reduce bloating, and stimulate appetite. It also has carminative and antispasmodic effects.

Storage

  • Drying: The seeds should be dried in the shade in a well-ventilated area and stored in airtight containers to preserve their aroma.
  • Freezing: The young leaves can be chopped and frozen to maintain their freshness and flavor.

Companion Planting
Caraway grows well alongside plants like coriander, fennel, and dill, which have similar soil and sunlight requirements. Avoid planting it next to carrots, as this may promote certain diseases in umbrella-shaped flower plants.
