Broccoli
Broccoli originally comes from Italy and produces a green head made up of many small, tightly packed flower buds, called "flowers" or "bouquets." These heads are supported by a thick, sturdy stem and surrounded by green leaves. It is these flower buds that are eaten when they are well-formed. Broccoli has a firm, crisp texture when raw and becomes softer when cooked. It is believed to be the ancestor of cauliflower but has a longer growing period. It was traditionally grown over two years, except for early-heading varieties.
